"Edip Sigl is a good friend whom I still know from our time together at Heinz Winkler. It's great to be back in the kitchen with him and to be able to inspire guests together. And at such a beautiful place as the Achental - I'm looking forward to it!"

Silvio Nickol discovered his passion for cooking at the age of 7 at home in Hoyerswerda, Germany, when he was making meals for his little brother because his single mother had to work.

A lot of work, a lot of pleasure and great teachers then later characterize the years of apprenticeship and travel: 1994 with Lothar Eiermann in Zweiflingen, 1997 as Chef de Partie with Harald Wohlfahrt at the Hotel Traube Tonbach. In 1999 he spent years in Belgium with Roger Souvereyns before returning to Harald Wohlfahrt as Sous Chef in 2001. From 2006, he cooked at Heinz Winkler in Aschau before his path took him to Austria a year later as head chef at the Schlosshotel Velden. In 2009, his cuisine there was awarded two Michelin stars. Since 2011, Silvio Nickol has been in charge of the gourmet restaurant at Vienna's Hotel Palais Coburg, which has been one of Austria's top restaurants since it opened.

Currently Silvio Nickol holds 2 stars Guide Michelin and 5 hoods Gault Millau (19 points), making him one of the most successful chefs in the country. The chef makes a point of not being pigeonholed with his line of cuisine: "I grew up with classical cuisine and still think it has its justification. But of course you evolve over the course of your career, and in the last few years in particular we've begun to focus even more on the essentials, to place much more emphasis on taste. The plates have become more manageable and the flavor focus has been on the few components on the plate."

The dishes focus strongly on the quality of the products, which is why Silvio Nickol works primarily with high-quality and hand-selected producers from Austria, whom he also often visits personally with his team. New dishes for the menu, which changes every two to three months, are created in teamwork. "The ideas of all employees flow into it. I have a strong team with great chefs and there is an intense brainstorming process before a new dish is created. But one thing is clear, of course, only a dish that I myself am 100% enthusiastic about makes it onto the menu," emphasizes the chef, who is known as a tinkerer and perfectionist.

Appreciation and recognition for his team is very important to the German chef, which is why he renamed the "Austrian Chef of the Year 2014" award from Gault Millau to the title "Team of the Year."
